Ingredients:

1 lb. shrimp, peeled and diveind
1 lb. portabella mushroom
2 red peppers
1 sm. onion
2 cloves garlic
1/4 cup extra-virgin olive oil
Pasta of choice
1 lb. mozzerella cheese
Parmesan cheese

Directions:

In a large skillet brown finely chopped garlic and onion in olive oil. Cook peppers until tender, add sliced mushrooms, add shrimp until cooked. Set aside, prepare pasta.

Combine shrimp mixture and pasta in baking dish. Cover with cheeses and bake at 375°F for 15-20 minutes.

Here in the north, fresh portabella season is almost over--dang! This recipe marries two perfect foods--shrimp and mushrooms--in a wonderful dish. It's easy, it's tasty, and if you watch the oil, it's very low-fat. Great, simple dish.
