Ingredients:

4 md. to lg. potatoes, peeled and thinly sliced
1 lg. onion, finely diced
2 rashes bacon, rind removed, diced
1 box macaroni and cheese pasta and sauce mix (add milk, water and butter as directed on box)
3 cups shredded cheddar cheese
Butter for greasing oven dish and cooking onion and bacon

Directions:

Heat oven to 350°F. Heat butter in saucepan and add onion and bacon. Cook until onion soft.

Meanwhile, cook macaroni and cheese mix according to packet instructions. When cooked add onion and bacon and mix.

Grease deep oven dish and layer the bottom with peeled and sliced potatoes until bottom of dish is just covered. On top of this layer pasta/bacon mix, then cheese then potatoes again until ingredients run out. Finish off with layer of cheese. Place in preheated oven and bake for 1 hour.

You can add asparagus or mushrooms to the layers if you wish. In fact this recipe is only limited by your imagination.
