Crust:
2 cups graham cracker crumbs
1/2 cup sugar
4 tbsp. butter, melted
1 very small ripe banana
Filling:
4 bananas cut into 1/4-inch slices
2 tbsp. butter
3 cups milk
1/3 cup cornstarch
1 pinch salt
3 lg. egg yolks
3/4 cup sugar
1-1/2 tsp. vanilla extract
Whipped Cream Topping:
2 cups whipping cream
3/4 cup powdered sugar
1/2 tsp. vanilla extract

Directions:

Crust:
Cream all ingredients together; press firmly into a 9\" greased pie pan. Bake at 350°F for 15 minutes until light golden brown. Cool completely.
Filling:
Bring milk to a boil. In a bowl whisk cornstarch, sugar, salt and eggs together. Temper egg mixture with milk. Return to stove top and cook scraping bottom of pot with spoon to prevent burning. Cook until it boils for 2 minutes. Turn off heat and stir in butter and vanilla. Assemble immediately.
Assembly:
Pour 1/3 of cream filling into pie shell, then put a layer of sliced bananas on top. Pour 1/3 of cream over that, then another layer of sliced bananas. And finally, pour remaining cream to form top layer. Chill 4 hours.
Topping:
Begin whipping cream with a hand mixer. When cream starts to form peaks, add powdered sugar and vanilla extract.

Missy, Banana Cream Pie is my favorite pie out of all pies. I use to have my mother make it for me insted of birthday cake. Now to yours ;) I will not tell my mother that I found a pie better then hers YOURS WAS GREAT (FIVE STARS HERE)! |
