Ingredients:

1 (4 to 5 lb.) duck
Salt, to taste
2 cloves garlic, crushed
3 scallions, finely chopped
3 tbsp. soy sauce
3 tbsp. dry sherry
2 tbsp. honey
1 cup boiling water

Directions:

Preheat oven to 350°F. Wipe the duck with a damp cloth. Rub the duck in side and outside lightly with the salt. Mix the garlic and scallions with the soy sauce and the sherry. Divide the soy mixture in half. Mix the honey with one half of the soy mixture. Rub some of the soy, honey mixture onto the duck and let dry a few minutes. Repeat a few times and let dry. For basting the duck, add the boiling water to the remainder of the combined sauce. Pour the reamaining half of the soy mixture into the duck cavity. Put the duck on the rack in the oven over a drip pan filled with water. Roast until done about 1 3/4 hours - 2 hours. Baste about every 15 minutes. Don\'t forget to keep water in the drip pan. This helps to steam the duck as well.
