Ingredients:

25 dried apricots
1/4 to 1/2 tsp. cinnamon
1/2 cup almond meal *
1 cup wholemeal self-raising flour
1 lg. or 2 small bananas
2 cups water
5 dried pears, halved
10 dried prunes
10 dried figs
1 tsp. finely grated orange rind.

Directions:

Preheat oven to 180°C / 350°F. Grease a 20-cm. / 8-inch long loaf cake tin

Place all of the dried fruits in saucepan with the water. Bring to the boil, cover and simmer for 5 minutes. Remove 10 apricots from the pan and blend these to a puree with the cooking liquid and banana. Place in a large mixing bowl. Mix flour and almond meal with the fruit puree and stir in all the cooked fruits, cinnamon, and orange rind. Spoon mixture into prepared cake tin and bake in oven for about 40 minutes. Allow to cool before unmoulding onto a wire rack.

This is a very good recipe for people who suffer from diabetic problems, or who are intollerant of dairy products as it contains no dairy products or sugar.
It has plenty of sweetness from all the dried fruit in the recipe.

It is lovely eaten as is, or spread with a small amount of butter or margerine.
