Ingredients:

1 egg, beaten
2/3 cup milk
1-1/4 cups flour
2 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt

Directions:

Beat the milk with egg. Blend dry ingredients and gradually add the milk mixture, beating constantly until batter is smooth.

To make cakes:
Holding your finger over the bottom of a funnel, should have a 1/2-inch hole, fill the funnel with batter. Holding funnel as near to surface of hot oil as possible, remove finger and drop batter into deep oil, heated to 375º. Use a circular movement, starting from center to form a spiral cake, about 3\" inches in diameter. Immediately replace finger on bottom of funnel and continue to form other cakes.

Do not crowd. Fry for 2 minutes on each side, turning once with slotted spoon. When brown, put on paper toweling and keep warm in oven. Serve hot with syrup and powdered sugar.

A deep fried pastry which is made from batter dripped through a funnel is often a treat for breakfast.
The funnel cakes are swirled in a spiral in hot fat and serve with sugar or maple syrup.
