Ingredients:

4 eggs, separated
4 slices cooked ham or cooked bacon
4 slices white bread, toasted
4 slices American or Swiss cheese
4 slices tomato

Directions:

Preheat oven to 350°F. Put egg whites in a bowl and whip with a hand mixer or stand mixer until very stiff. Put the toast on a sheet tray or cookie sheet and put one slice of ham or bacon on each as well as tomato and cheese. Mound 1/4 of the whipped egg whites on top of each slice of toast. With the back of a tablespoon make a cup in each mound of egg whites to hold one egg yolk. Carefully place 1 egg yolk in the cup made with the spoon into the mounded whites. Place in oven and bake for 12-15 minutes.

This is the first breakfast special that I came up with when I was just starting out as a chef in New York. I have made it many times and people still get a kick out of just looking at it as well as eating it.

WOW! I made the sun & clouds for some friends for breakfast who are artist. They got a big kick out of them. I had some mornay sauce to put over the top of them boy they were great.
