1-1/4 lb. beef chuck, cut into 1-inch squares
1 tbsp. oil
1-1/2 tbsp. flour
1 tsp. salt
1 dash pepper
3/4 tsp. chili powder
2 cloves garlic, minced
1 md. onion
1 green pepper, chopped
1 can (10-1/2 oz.) condensed beef broth
1 can water
1/4 tsp. dried oregano leaves
4 md. potatoes, peeled and sliced
2 md. carrots, peeled and sliced

Directions:

Heat oil in Dutch oven. Toss beef in mixture of flour, salt and pepper. Brown well on all sides in the hot oil. Add chili powder, garlic and onion. Sauté lightly. Add beef broth, water and oregano. Bring to a boil. Cover. Reduce heat and simmer for about 1 hour, stirring from time to time. Add vegetables. Simmer for another 20 minutes or until meat is tender.
