Ingredients:

2 cups flour
1 tbsp. butter
3 eggs
1/2 tsp. salt
1 cup water, lukewarm
1 lb. ricotta cheese
2 cups tomato sauce
1 tbsp. fresh basil, chopped
1/2 cup Romano cheese, grated

Directions:

Mix flour, butter, eggs and salt in a large bowl. Gradually add water and mix to form a soft dough. Knead on a floured board until smooth. Roll out with a rolling pin until thin. Cut into rectangles about 4x6-inches each. Put 1-1/2 tablespoons of ricotta cheese in the center of each rectangle. Roll over the dough to close and moisten with a little water to seal. Boil manicotti gently in water for 10 minutes and remove with a flat strainer. Place into a oiled baking dish and top with tomato sauce. Sprinkle with fresh basil. Bake in a 400°F preheated oven for 10 minutes. Serve with the grated Romano cheese on the side.
