Ingredients:

2 bunches spinach
1 to 2 cup red onion, sliced thinly into 1-inch strips
10 slices bacon, cooked and crumbled
1/2 cup sliced almonds, toasted *
1 cup mushrooms, sliced
2 eggs, hard boiled and sliced

Dressing:
1 cup icing sugar
1 cup salad oil
2/3 cup cider vinegar
1 tsp. salt
1 tsp. pepper

Directions:

Combine salad ingredients in large bowl. Put dressing ingredients in another bowl and use mixer to beat until fully combined. Add to salad and enjoy.

* To toast almonds place on a cookie sheet and bake on bottom shelf in 350 degree oven for 6-8 minutes.

Many years ago I bought this spinach salad at a mall I worked at. It was addictive and I remember having it for lunch at least 3 times a week. I tried for years to get the recipe and could never find it until now. I am very happy, as it is the best I have ever had
