Ingredients:

1-1/2 cups flour
2 cups skim milk
1/4 cup frozen apple juice
2 tsp. vanilla extract
4 egg whites
4 apples
1/4 cup orange juice
1 tsp. cinnamon
1/4 tsp. ginger

Directions:

Mix flour, milk, apple juice and vanilla. Beat egg whites until foamy. Mix all together well. Set aside. Peel and slice apples. Spread over bottom of 8x12" baking dish. Sprinkle orange juice evenly over apples. Sprinkle 1/2 of cinnamon and ginger over apples. Add remaining cinnamon and ginger to batter. Mix together and pour over apples. Bake at 400°F for 30 minutes or until lightly browned and well set. Cut pudding into squares and serve with sour cream if desired.
