Ingredients:

2 lg. ripe bananas, mashed
1-1/2 cups self-raising flour, sifted
1 tsp. baking powder
1 tsp. nutmeg powder
8 tbsp. olive oil
3 tbsp. low-fat milk
1/4 cup sugar (or less if desired)
chopped nuts (optional)

Directions:

Preheat the oven to 200°C. Arrange 6 paper cases in a deep muffin tin. Sift the flour and baking powder into a mixing bowl. Rub the oil into the flour until the mixture resembles breadcrumbs. Stir in the sugar and nutmeg powder. Add the mashed bananas and milk. You may want to add an extra tbsp. of milk if the bananas are not very creamy. Spoon into prepared muffin tin and bake for 20-25 minutes.
