Ingredients:

2 lg. onions, minced
2-1/2 tbsp. vegetable oil
2-1/2 tbsp. Worcestershire sauce
1 tbsp. dijon mustard
1-1/4 cups ketchup
2-1/2 cups chicken broth
3/4 cup cider vinegar
1/2 cup plus 2 tbsp. maple syrup

Directions:

In a large heavy saucepan combine the onions, oil, worcestershire sauce, ketchup, broth, vinegar and maple syrup. Bring mixture to a boil. Simmer, stirring occasionally, for 50 minutes, or until it is reduced by 1/3.

The sauce may be made 1 week in advance and kept covered and chilled. It makes about 3-1/3 cups.

Einar, great recipe. I added this to pork spare ribs and everybody oooh'd and aaah'd over it. The sweetness of the sauce when the maple syrup and the onions when cooked down was unreal!


I made this last night at work to go with grilled chicken. OH MY GOD! It sold out in about an hour and I made 30 orders of chicken and had to make more of the sauce. Next week RIBS.
