Ingredients:

1 tbsp. grated lemon peel
1/3 cup lemon juice
1-1/2 tbsp. cornstarch
4 eggs
1/4 cup milk
1-1/4 cups sugar
2 tbsp. sweet butter, melted
2 oz. unsweetened chocolate, melted

Directions:

Filling:
Place the lemon rind, lemon juice and cornstarch in a large mixing bowl; whip thoroughly. Add milk, eggs and sugar. Blend until smooth. Add melted butter and mix. Set aside.

Crust:
Melt chocolate in a double boiler. Pre-bake the pie crust until the edge just starts to turn brown (not too long). Coat the inside of the crust with the melted chocolate using a pastry brush.

Add the filling to the pie shell and bake at 350°F for approximately 30 minutes, or until filling is firm.
