Ingredients:

1-1/2 lb. ground beef
2 tsp. seasoned salt, or to taste
2 tsp. seasoned pepper, or to taste
1 can (sm. or md.) Ranch style beans
1 can corn, drained
1 can diced Rotel tomatoes and green chilies, or to taste
1 sm. can tomato sauce (optional)
1 pkg. grated Velveeta or cheddar cheese

Directions:

Season ground beef with salt and pepper. Brown, and drain fat. In large 2 to 3 quart pot, add meat, beans, corn, Rotel, and tomato sauce, if desired. Cook until heated thoroughly. Add cheese. Simmer until melted. Serve.

This is excellent for those chilly evenings. Serve with cornbread for a hearty meal. I adjust the spices accordingly for the kids.
