Ingredients:

3 ripe tomatoes
1 tsp. English mustard
1 tsp. French mustard
1 tsp. Dijon mustard
1 tbsp. white wine vinegar
2 tsp. caster sugar
1 tsp. tomato purée
4 tbsp. olive oil
Salt and pepper

Directions:

Place all the ingredients in a blender and then process. Slowly add the oil and then strain the dressing through a wire sieve to remove the tomato pips. Reserve the dressing for the salad and serve apart.
