Ingredients:

1 cup shortening
1-1/2 cups sugar
1 egg
1 can (9 oz.) crushed pineapple, drained
3-1/2 cups flour
1 tsp. soda
1/2 tsp. salt
1/4 tsp. nutmeg

Icing:
2 confectioners sugar
2 tbsp. softened margarine
Pineapple juice (add to desired thickness)
-or-
2 cups confectioners sugar
1 tbsp. softened margarine
Milk
Vanilla

Directions:

Mix shortening, sugar and egg together. Stir in drained crushed pineapple. Add rest of ingredients. Chill mixture at least one hour. Bake 8-10 minutes at 400°F.

Icing:
Mix ingredients together and spread over top cookies after slightly cooled.
