Ingredients:

8 green apples, peeled, cored
1/2 cup sugar
2 shots grappa
1 pinch cinnamon
1 tsp. salt
1 lemon, juice of
1/4 cup fresh chives

Directions:

Quarter apples and place them in a saucepan over medium heat with the sugar, grappa, cinnamon, salt and lemon juice. Cook until soft and broken down, 10 to 15 minutes. Remove from heat, stir in chives and serve immediately.

Do you need to use grappa? Could you use something else?


What is grappa? Grappa is a peasant drink that can be found in most good liquor stores that has an assortment of good Italian Alcoholic beverages. The question for the cook is not necessarily what is grappa?, but what kind of Grappa? Grappa comes in about as many varieties as you can think of . . . in some small local Italian eateries, you can find grappa in well over a dozen flavors . . . all very, very strong in both flavor and alcoholic content.
