Ingredients:

1/2 tsp. dry yeast
1 tsp. sugar
1/4 cup plus 1/4 cup warm water
1 cup plain flour
3/4 tsp. salt
1/2 cup milk
Oil, for deep frying
Sugar mixed with a little cinnamon

Directions:

Mix together the yeast, sugar and 50 ml. water until frothy. Combine the yeast mixture with the flour, salt, milk and 100 ml. water until it makes a smooth batter. Set aside in a warm place for 1 hour to prove/rise and thicken. Stir again.

Heat the oil in a deep fryer or wok until it reaches 170 to 180°C. Drop teaspoonfuls of the mixture into the oil, rolling them to ensure even cooking. When golden, remove from the pan and sprinkle with sugar and cinnamon.
