Ingredients:

2 cups whole wheat pastry flour
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt (optional)
1 tsp. active dry yeast
1/4 cup water
1 tsp. honey
1/2 cup cooked oat bran*
1 cup low-fat soy milk
1 tsp. lemon juice

Directions:

Combine the first four ingredients and set aside. Combine yeast, water, honey and cooked oat bran and let rest a few minutes. Then add the soy milk and lemon juice, mix well, and combine with the dry ingredients. Pour into a hot waffle iron and cook for 7 minutes. Serve with pure maple syrup, unsweetened applesauce and cinnamon, or no-sugar pure fruit jam.

*To make 1/2 cup cooked oat bran, cook 1/4 cup uncooked oat bran in 3/4 cup water for 2 minutes.
