Prep. Time:

Total Time:

Ingredients:

2 cups all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
4 tbsp. honey or 2 tbsp. sugar
2 eggs, beaten
2 tbsp. butter, melted
2 cups mashed blackberries*
2 cups buttermilk

Directions:

Shake the blackberries and a little flour together in a paper bag.

Beat together all the liquid fixin's (including blackberry juice). Sift together all the dry fixin's. Stir the blackberries into the liquid fixin's. Dump the dry fixin's into the liquid and stir just enough to wet all the flour and evenly distribute the berries.

Pour about 1/4 cup of batter for each flapjack on a greased griddle or fryin' pan and turn over when bubbles show up on the top.

Serve with honey and melted butter and fried ham.

Comments from Uncle Ed Swanzey :

*Don't mash 'em too much, and save the juice.
