Ingredients:

1 cup all-purpose flour
1 cup yellow corn meal
1/3 tsp. salt
3/4 cup sugar
4 tsp. baking powder
2 eggs
1/2 cup melted margarine
1 cup skim milk
1 tsp. orange extract
1 can economy mandarin orange slices

Directions:

Grease an 8x8x2-inch pan. Mix ingredients together well, stirring so that orange slices break apart. Pour mixture into pan. Bake at 425°F for 30 minutes or until a toothpick inserted in the center comes out clean.
