Total Time:

Ingredients:

1 cup corn meal
1 cup all-purpose flour
1/4 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 egg
1/4 cup shortening

Directions:

Combine corn meal, flour, sugar, baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, approximately 1 minute. Turn batter into a greased 8-inch baking pan and bake at 425°F for 20 to 25 minutes. Bake 15 or 20 minutes.

Comments from Kathleen Morrison :

Batter can also be used for muffins or corn sticks.

This is the recipe that used to be on the Quaker Oats corn meal boxes until they suddenly decided to change it (for the worse, in my opinion) in the 1990's.
