Ingredients:

1-1/4 cups all-purpose flour, sifted
3/4 cup cornmeal
3 tsp. baking powder
1 tsp. salt
1/4 cup sugar
1 lg. egg, well-beaten
3/4 cup milk or buttermilk
4 tbsp. margarine, melted

Directions:

Sift together the flour, cornmeal, baking powder and salt. Set aside. Combine the sugar, egg, milk, and margarine. Add to the dry ingredients, stirring just enough to moisten the dry ingredients. Place in a greased 8x8-inch pan and bake in a 400°F oven about 20 minutes or until golden. Serve hot with butter and apple butter. You can also make a dozen muffins or corn sticks. Test after 15 minutes.
