Ingredients:

1 lb. lean ground beef
1 cup onion, chopped
1 cup carrots, thinly sliced
1 can (14-1/2 oz.) tomato, undrained
1/2 tsp. basil, crumbled
1/2 tsp. pepper
4 cups hot water
1/2 tsp. salt
1-1/3 cups celery, chopped
2 md. potatoes, peeled and cubed
1 pkg. (10 oz.) frozen vegetables
1 bay leaf
4 beef bouillion cubes

Directions:

Brown beef and stir in remaining ingredients. Bring to boil then reduce and simmer covered for 30 minutes or until vegetables are tender.

I also add a little cabbage to this near the end. I am not crazy about vegetable soup, but I love this one! I make it all the time.


I make one similar. I don't use potatoes I use some corkscreww pasta and also beef broth instead of cubes
