Ingredients:

2 md. sweet potatoes, scrubbed
Nonstick vegetable oil spray
Salt

Seasoning Mix:
2 tbsp. flat leaf parsley, washed, spun dry and finely chopped
1 tsp. garlic, minced
1 tsp. lemon zest, freshly grated
Black pepper, freshly ground

Directions:

Preheat the oven to 400°F. Cut the potatoes crosswise 1/4-inch thick. Spray a baking sheet with the nonstick vegetable oil spray and arrange the potatoes in one layer. Bake them in the preheated oven for 15 minutes. Turn them over and bake them for an additional 10 minutes or until just golden. Sprinkle them with the seasoning mix and serve.

To make the seasoning mix: in a bowl stir together the parsley, garlic, lemon zest, pepper and salt to taste.
