1 lg. onion, finely chopped
2 ribs celery, finely chopped
6 tbsp. butter
2 slices white bread, torn
3 cups mashed potatoes
2 tbsp. fresh parsley, minced

Directions:
|
In a large saucepan, saute the onion and celery in butter until tender. Remove from the heat. Add bread, potatoes and parsley; mix well. Spoon into a greased 1 quart casserole. Bake, uncovered, at 350°F for 45 minutes or until top is lightly browned.
