2 tbsp. butter or margarine
2 md. zucchini, sliced
2 carrots, sliced
1 sm. onion, chopped
1 container (8 oz.) sour cream
1 cup (4 oz.) cheddar cheese, shredded
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. Italian-seasoned breadcrumbs

Directions:

Melt butter in a large skillet over medium heat; add zucchini, carrot, and onion, and sauté 8 to 10 minutes or until tender. Remove from heat; stir in sour cream and next 3 ingredients. Spoon into a lightly greased 1 quart baking dish. Sprinkle with breadcrumbs. Bake at 350°F for 20 minutes or until thoroughly heated.
