Ingredients:

2 cloves garlic
1 tbsp. grated fresh ginger
1/3 cup smooth peanut butter
1/4 cup soy sauce
2 tbsp. fresh lime juice
1 tbsp. molasses
8 oz. angel-hair pasta, uncooked
3 md. cucumbers, peeled, seeded, and coarsely chopped
1/2 cup sliced green onions
1/4 cup toasted sliced almonds

Directions:

Process garlic, ginger, peanut butter, soy sauce, lime juice and molasses in an electric blender until mixture is smooth, stopping once to scrape down sides.

Cook pasta according to package direction; drain and return to pan. Add garlic mixture and toss gently. Spoon onto a serving platter; top with cucumbers, green onions and almonds.
