Ingredients:

6 slices bacon
1/2 cup mild vinegar
1 tbsp. sugar
2 cups mashed potatoes
1 to 2 qt. shredded lettuce

Directions:

Dice bacon and fry slowly until crisp and brown. Pour off part of the fat and add the vinegar and sugar. Place potatoes in the bottom of large pot; cover with the shredded lettuce. Pour hot bacon and vinegar mixture over lettuce. Cover; let lettuce wilt some. Then stir and serve immediately.

I have seen this recipe before but never made it. And they called for peeled and boiled potatoes not mashed. They were good but I think that I would stick with the boiled potatoes instead.
