South Dakota Cabbage in Bacon-Cheese Sauce

Ingredients:

1/2 lb. bacon
1/4 cup bacon fat
1/4 cup all-purpose flour
2 cups milk
1/4 lb. shredded cheddar cheese
1 md. head green cabbage, cut into wedges
Croutons

Directions:

Cook bacon; drain and keep warm. Prepare white sauce with bacon fat, flour and milk. When thickened, stir in cheese, salt and pepper to taste. Cook cabbage in small amount of water until tender, approximately 10 minutes. Drain and put on hot platter. Top with cheese sauce and garnish with crumpled bacon. Sprinkle with croutons.
