Ingredients:

1 pkg. (10 oz.) Matchstick Cooking and Salad carrots (or cut your own)
1 apple, cut into 1/2-inch dice (Mutsu/Crispin, Granny Smith, Spy or Empire)
1/2 cup orange juice
1 tbsp. brown sugar
1/4 tsp. black pepper

Directions:

In saucepan combine carrots, apple, orange juice and brown sugar. Sauté until carrots are tender-crisp and liquid has evaporated, approximately 6 to 7 minutes. Serve immediately.

Ease of preparation is enhanced by the use of Matchstick carrots -- a terrific shortcut! Without butter, this is a low-fat version of traditional glazed carrots. Try serving this recipe as a vegetable side dish to go along with pork.
