Ingredients:

2 pkg. (20 oz. each) frozen baby lima beans
1 cup water
2 tbsp. unsalted butter or margarine
1 md. onion, chopped
4 tsp. curry powder
1/4 cup non-fat plain yogurt
4 tsp. fresh lemon juice
1/4 tsp. coarse (kosher) salt
1/8 tsp. black pepper

Directions:

Bring the lima beans and water to a boil in a medium saucepan over high heat. Lower the heat; cover, and cook for 6 minutes. Drain and set aside. Melt the butter in the same saucepan over medium heat. Add the onion and curry powder. Cook, stirring occasionally, for 6 to 8 minutes or until the onion is tender. Stir in the lima beans until heated through. Remove from the heat. Stir in the yogurt, lemon juice, salt and pepper until well combined. Serve immediately.
