Ingredients:

2 tsp. cornstarch
1/3 cup sugar
1/2 tsp. salt
1/8 tsp. pepper
2/3 cup vinegar
1/3 cup water or beet liquid
3 cups sliced cooked beets
1 tbsp. butter

Directions:

Mix cornstarch with sugar, salt and pepper. Stir in vinegar and water. Cook over low heat, stirring constantly until mixture is smooth and thickened. Add cooked beats and reheat. Stir in butter just before serving.
