1 egg
1/2 cup milk
1 can (12 oz.) corn with sweet peppers
1 tbsp. oil
1-1/2 cups flour
1 tbsp. baking powder
1 tsp. salt
Pepper, to taste

Directions:

Beat egg in a large bowl. Stir in milk, can of corn with sweet peppers and 1 tbsp. oil. Add and beat in flour, baking powder, salt and pepper. Drop tbsp. of the mixture into deep or shallow hot oil heated to 375°F. Fry until golden brown, 2 to 3 minutes on each side. Drain on paper towels. Serve hot. If desired, serve with a syrup.
