Ingredients:

1 9-inch pastry
1 sm. onion, chopped
1/2 lb. fresh mushrooms, sliced
2 tbsp. olive oil
3 eggs, beaten
1/2 cup evaporated milk
8 oz. sour cream
1/2 tsp. ground nutmeg
1 tsp. salt
1/2 tsp. pepper
1/2 lb. Swiss cheese, diced
1 tbsp. all-purpose flour

Directions:

Line a 9-inch quiche dish or pie pan with pastry; trim excess pastry around edges. Prick bottom and sides of quiche shell with a fork; bake at 425°F for 6 to 8 minutes. Let cool on rack.

Sauté onion and mushrooms in olive oil until tender. Combine next 6 ingredients in a large bowl; stir well. Combine cheese and flour; add to egg mixture. Stir in onion and mushrooms. Pour into pastry shell and bake at 350°F for 45 minutes or until set.
