Ingredients:

2 tsp. honey
1 tsp. finely minced fresh ginger
1 lime, finely grated and juiced
4 tbsp. extra-virgin olive oil, or less
Seasonings, to taste
8-2/5 oz. mixed baby lettuces
1 bunch chives, roughly snipped
1/2 cup mint leaves
1/2 cup flat parsley leaves
1 cup edible flowers

Directions:

Mix together the honey, ginger, lime zest and juice. Whisk into the olive oil. Season to taste. Set aside.

Select the prettiest of the lettuce leaves and place in a large mixing bowl with the fresh herbs. Just before serving, re-whisk the dressing and pour over the leaves. Mix gently before adding the flowers. Serve on individual plates, arranged in airy layers.
