1 sm. onion, chopped
2 tbsp. oil
1/2 lg. cooking apple, chopped
1 slice streaky bacon, chopped
1/2 lg. red cabbage, coarsely shredded
15 fl. oz. beef stock
3 tbsp. vinegar
2 cloves
1 pinch caraway seed
Salt and pepper, to taste

Directions:

In a large casserole fry onion in butter or oil until soft. Add bacon and apple and fry a couple of minutes more. Stir in cabbage and then add enough beef stock almost to cover cabbage. Now add vinegar and seasonings, grinding the caraway lightly if you don't much like the flavour, and stir together again. Bring to boil; cover tightly and put into pre-heated 325°F oven for several hours, until really tender.
