Ingredients:

1 tomato, seeds removed, and diced
1 avocado, diced
1 truffle, for serving
1 green apple, diced
1 lobster tail and claw per person, cooked
1 lemon, juice of
1 lime, juice of
1/4 cup diced chives
Olive oil and balsamic vinegar, to taste
Salt and pepper, to taste

Directions:

Dice the tomato, avocado, and green apple. Toss together in a bowl with some oil and the vinegar, adding to the flavor you desire. Add the lemon and lime juice. Stir together. Lightly toss the lobster tail with extra lemon juice and very little oil. On a bed of greens, layer mixture and lobster, alternating in a pyramid. Top with claw and a slice of truffle.
