Ingredients:

1 cup halved cherry tomatoes
3/4 cup diced fresh pineapple
3/4 cup diced rockmelon
3/4 cup seedless grapes
3/4 cup halved strawberries
1/2 cup diced cucumber
2 spring onions, finely sliced
1 tbsp. John West Lemon Grass
2 cans (125 g. each) John West Smoked Tuna Slices, drained
2 tbsp. finely shredded mint
2 tbsp. chopped toasted peanuts

Dressing:
2 tbsp. lime or lemon juice
2 tsp. brown sugar
2 tsp. John West Chill
Salt, to taste

Directions:

Place tomatoes, pineapple, rockmelon, grapes, strawberries, cucumber and spring onions into a large bowl and mix well. Fold through lemon grass, tuna and mint. Add dressing. Mix together gently, sprinkle with peanuts and serve at once. Serve as an entree or part of a Thai meal.

Dressing:
Place all ingredients into a small bowl and mix until sugar is dissolved.
