Ingredients:

1 lb. imitation crab (surimi)
1/4 cup chopped green onion
1 cup chopped celery
2 tbsp. reduced calorie mayonnaise
2 tbsp. non-fat yogurt
1 oz. grated low-fat cheddar cheese
1/4 tsp. paprika
1 tbsp. lemon juice

Directions:

Combine all ingredients and mix well.

One serving: 1/2 cup. Nutritional information per serving: 90 calories, 3 grams fat. Exchanges: 1 lean meat, 1 vegetable.

Serving suggestions: Serve 1/2 cup on a toasted English muffin half and broil until cheese is melted. This recipe is good on lettuce or as a sandwich spread.

Substituting shrimp for part or all of the crab also tastes good. Sodium can be significantly reduced by using fresh crab instead of the imitation.
