1 pkg. (18 oz.) cheese tortellini, cooked and drained
2 red or green bell peppers, cut into thin strips
1 sm. red onion, thinly sliced
1/4 cup sliced ripe olives
1/2 cup crumbled feta cheese
Lemon Mint Dressing:
1/2 cup white wine vinegar
1/2 cup olive oil
3 tbsp. snipped fresh mint or
1 tbsp. dried mint
2 tbsp. dry sherry
1-1/2 tsp. seasoned salt
1 tsp. garlic powder
1/4 tsp. crushed red pepper, or to taste
1 tsp. black pepper, or to taste
3 tbsp. lemon juice

Directions:

Combine all dressing ingredients and blend well. Set aside. In a large bowl combine pasta, peppers, onion and olives. Toss the dressing into the pasta. Chill 4 to 24 hours. Just before serving toss with the feta cheese.
