1/2 cup chopped onion
2 cups margarine or butter
1 bottle (12 oz.) beer
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
2 cups chicken broth
1 tsp. salt
1 tsp. ground cumin
1/4 tsp. ground nutmeg
1 dash ground cloves
1 dash pepper
1 cup sour cream
1 cup cheddar or Monterrey Jack cheese, cut into 1/4-inch cubes

Directions:

Cook and stir onion in margarine in 2-quart saucepan until tender. Stir in beer, carrot and celery. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Stir in remaining ingredients except sour cream and cheese. Heat to boiling; reduce heat. Cover and simmer for 30 minutes. Remove from heat; stir in sour cream. Sprinkle with cheese.

This is the best tasting beer soup that I've ever tasted, and trust me I've had alot.
It has a fantastic tang and really satisfies the taste buds.
I give it 10/10 for sure.

this sounds really good and i plan on making it tonight, but i can already tell what changes i will make. i'm going to use whipping cream in place of the sour cream and i'm going to use jalapeno jack cheese. or i might make it both ways and see which we like the best.
p.s. this is my first time on this site. i've been told i'm quite the "chefette", so i think i will enjoy this site. |
