1 lb. grated cheddar cheese
3 cups flour
1 cup butter, at room temperature
1 tsp. salt
1/4 tsp. cayenne pepper
1 cup chopped pecans

Directions:

Beat the first five ingredients with an electric mixer until well combined. Mix in the pecans. Divide the dough into thirds. Form each into a smooth 1-1/2-inch diameter log on a sheet of waxed paper. Wrap tightly. Refrigerate at least one hour to firm.*
Preheat the oven to 325°F. Remove the paper from the dough. Cut the dough into 1/4-inch thick slices. Arrange 1-1/2 inches apart on baking sheets. Bake until golden brown, 15 to 18 minutes. Transfer to paper towels and cool completely. Store in an airtight container.
