Ingredients:

1 cup all-purpose flour
1 tsp. curry powder
1/4 tsp. salt
1 cup chilled club soda
1/4 lb. mozzarella cheese, coarsely grated
1 tbsp. finely chopped fresh cilantro
16 zucchini blossoms, pistils removed if desired
Canola oil for deep-frying

Directions:

Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes.

In a small bowl toss mozzarella and cilantro. Stuff 1 tbsp. into each blossom, pressing ends of blossom closed. Heat 1 inch of oil in skillet to 375°F. Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
