Ingredients:

4 boneless chicken breasts
1 pkg. onion soup mix
1 bottle Russian dressing
1 jar (12 oz.) apricot preserves

Directions:

Preheat oven to 350°F. Mix the onion soup mix, russian dressing and apricot preserves in a bowl. Put chicken breasts in baking dish. Pour about 3/4 of the sauce over the chicken. Bake for 1/2 hour. Flip the chicken and pour remaining sauce over the chicken. Bake for another 1/2 hour, or until chicken is done. Serve over rice.

The sauce can be used as a marinade. The flavor of the chicken is better if the chicken has been soaking in the sauce for a few hours.





Another idea is to cut up slices of potatoes and bake along side the chicken. The potatoes absorb the flavor. Delicious!!
