Ingredients:

8 oz. mackerel fillets, smoked
1/2 cup skimmed milk soft cheese, or low-fat soft cheese
Lemon juice, to taste
Salt, to taste
Black pepper, freshly ground, to taste

Directions:

Flake the fish into a bowl. Add the soft cheese and lemon juice and season to taste. Mix the ingredients together well by hand or process in a blender. Put the paté into a serving dish and chill until needed. Serve with melba toast.

This will keep in refrigerator for up to 48 hours.

Melba toast: Melba toast is light and crisp and can be served instead of rolls with soup and other appetisers. It is made by cutting bread into thin slices and toasting slowly in the oven until crisp and golden. Alternatively, it can be made from thicker slices toasted on both sides, then split through the middle.

One serving: CHO negligible; 800 calories.
