Ingredients:

3 eggs
3 cups all-purpose flour
3 cups water
Salt and pepper to taste
11/20 lb. feta cheese*
2 fl. oz. olive oil, green extra virgin if possible

Directions:

Mix all the items together except the feta until it is a thick liquid and then pour into a greased baking pan (liquid should be about 1/2-inch deep). Sprinkle the feta on top; cook at 500°F. until crispy. Cut and serve.

*Nice damp stuff, not hardened old stuff.

I picked this up a month ago in Greece. It is specific to the region known as Zagoria up between the Pindos Mountains and Albania and is from the Hotel Elati in that area.

This is an excellent recipe to make for the "Mom, I need to take some Greek food to school" at 9:00 the night before. It was very easy to make, smelled wonderful, and the entire 6th grade loved it! I can't wait to make it this weekend.
