2/3 cup margarine
2/3 cup flour
7 cups milk
4 lg. baking potatoes, baked and peeled
4 green onions, sliced
12 slices bacon, cooked and crumbled
1-1/4 cups shredded cheddar cheese
1 cup sour cream
3/4 tsp. salt
1/2 tsp. pepper

Directions:

In a large soup kettle, melt the margarine. Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese in melted. Serve immediately.

I tried and really enjoyed this recipe. I work at a steak house which garnishes their potato soup with shredded cheese, green onion slices and crumbled bacon. I followed in their footsteps. The base has a wonderful flavor. I sent some over to an elderly gentleman, who has recently lost his wife and is now dining on fast food...he really appreciated the gesture and bragged about the soup! Thanks, Michelle |
