Ingredients:

1 cup raisins
1 cup diced dried fruit
2 cups water
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground nutmeg
1-1/2 tsp. ground cinnamon
2 eggs, beaten
1 cup unsweetened applesauce
2 tbsp. liquid sweetner
3/4 cup vegetable oil
1 tsp. vanilla extract
1/2 cup chopped nuts

Directions:

Combine raisins, fruit and water in a saucepan. Cook, uncovered, until water is evaporated and fruit is soft; set aside to cool. Meanwhile, in a large mixing bowl combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients, stirring to mix thoroughly. Pour into a greased 10-inch fluted tube pan and bake at 350°F for 35-40 minutes, or until cake tests done.
